The Augustine Grille
The Augustine Grille is serving up home grown farm and artisan products in an upscale, classically elegant setting in the Sawgrass Marriott Golf Resort and Spa. Food & Beverage Director Mark Butcher, and Executive Chef David Scalise are showing us the way to develop a “slow” menu with their innovative farm partnership with Snail of Approval recipient Twinn Bridges Farm. The farm delivers freshly picked produce and eggs; then picks up the Grille’s kitchen scraps for chicken feed and used fryer oil for bio-fuel production to run the farm delivery truck.
Cheeses from Sweet Grass Dairy, served with honey comb from Joe’s Bees, seafood from Safe Harbor and C&C Fisheries, and sustainably raised seafood from Cleanfish are featured on the Grille’s diverse menu. When they can’t find what they want locally, they are sourcing the finest quality regionally products available, including meats and poultry. These items are raised/grown using the principals of quality and sustainability. One of the Grille’s seasonal menu items reflecting our regional cuisine is their Mayport Shrimp, served with a grit cake using Anson Mill’s stone ground corn meal and completed with spinach, and a tasty tasso gravy.
