Bistro Aix, located on San Marco Blvd. in Jacksonville, represents the perfect melding of contemporary and classic culinary tradition. Executive Chef Tom Gray and his band of sous chefs artfully carry out their modern and original interpretation of French and Mediterranean Regional dishes. Making the source of their food a point of pride as well as taste, Bistro Aix features a wide selection of local, organic, sustainable and natural ingredients within their menu, highlighting the bounty of each season as it comes to pass.
Bistro Aix utilizes such resources as offered by Twinn Bridges Farm out of Macclenny, Fl. They also use both local seafood and sustainably-managed fish from North Carolina, as well as sustainably farmed shellfish and beef. Even the bar ascribes to the ethos of sustainability, as organic ingredients permeate both the wine and cocktail lists, and fresh herbs come straight from the Twinn Bridges garden to your table (or cocktail glass). Further continuing their efforts towards positive environmental stewardship, Bistro Aix also has in place a comprehensive recycling program and uses largely compostable products for their take-out containers. All of this goes to insure that the dishes they prepare live up to the highest standards of excellence and responsibility.
