Nestled in a renovated house on Cordova Street in St. Augustine, Opus 39 beckons diners to enter into a unique culinary experience. Chef/owner Michael McMillan uses seasonally grown herbs, fruits, and vegetables from the St. Augustine Farmers Market at the amphitheater when available. He changes his menu daily to accommodate what is fresh, organic, and seasonal. (He would love to have a local farmer plan with him and grow produce for him). He seeks out sustainable resources such as fresh fish from our local waters and farmed gulf coast clams. When a restaurant item is from a local purveyor, he mentions it on his menu. His bread is baked on the premises and with demand rising, Opus 39 is building a bakery in the backyard of his property.
Chef/owner Michael McMillan’s seasonal menu recently included a choice of cauliflower soup with prosciutto, and gnocchi with a butternut squash and beet greens sauce. For lunch he offered garlic pesto French fries, a salad of grilled organic romaine, and as an embellishment for a turkey sandwich, cranberry lemongrass compote. Each item on the menu celebrates Chef Michael’s creativity and expertise and can be accompanied by a selection from Opus 39’s Wine Room. Here you will find over 400 varieties of wine, including organic selections, which diners can sample before making a purchase of a glass or bottle.
