“Southern Comfort with a French Flair” appears on their restaurant menu and their catering van to appropriately describe what you will find at Pastiche. This cozy and intimate dining establishment, under the creative team of Chef Eric and Donna Fritsche, has been serving up locally sourced favorites and imaginative French offerings with local Florida ingredients for the past eight years. If it’s the dining alfresco experience you are interested in, you can have that too in their outdoor covered cottage garden.
The Fritsch’s have a farm partnership with Twinn Bridges Farm in MacClenny for fresh sustainably grown produce and they use Bob’s Bees honey. Their fish is locally sourced. Donna, an experienced gardener, has provided the restaurant with homegrown organically raised tomatoes and herbs. They also find fresh ingredients at the local farmers market and procure their grits from heirloom grower Anson Mills. Gardening friends contribute blueberries and figs. Try the watermelon salad with shaved red onion, feta cheese, and honeycomb vinaigrette or maybe stuffed squash blossom beignets with fresh tomato veloute’ before choosing your main course. Look for locally grown citrus on the menu when the season arrives.
